lately, i've been learning to cook for one with fresh ingredients and almost no meat (the thought of touching raw, slimy meat makes me want to spew buckets! eggs being the only exception...) so in an effort to work around my newly vegetarian menu, i've found that there are dozens of different ways to make breakfast burritos (hence, "#37"); here is a yummy way that i've been making recently. vary the ingredient quantities depending on much you like/loathe the materials:
butter (or non-stick cooking spray)
fresh, sliced white mushrooms (i buy the pre-sliced and pre-washed kind in the handy carton (did i mention that i like things efficient and easy?!), but if you're buying the whole mushrooms, congrats and use 4-5)
1 green onion
red pepper flakes (i use two pinches, but i like it hot!)
2 eggs and some milk
shredded colby jack cheese
fresh cilantro leaves
flour tortillas
put a small slab of butter in a fry pan with the mushrooms, green onions, and red pepper flakes. sizzle until mushrooms are tender. in a separate bowl, whip together the eggs and milk, and add to the mushroom pan to make scrambled eggs. then, divide mixture onto two tortillas, add cilantro, and then roll up burrito-style.
you can also add some tomatoes or salsa if you have some on hand. the red pepper flakes add a nice kick though! enjoy!

Oh - good idea on the red pepper flakes, I'll go for half a pinch. :) And I love cilantro, what a yummy and colorful way enhance the meal! :)
