Blueberry-Orange Muffins

This is my new favorite muffin recipe! They make good take-along snacks for school. And they're pretty healthy too, as far as muffins go :)

1 1/2 cups all-purpose flour
2/3 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1 large egg
1 large egg white
2/3 cup packed light brown sugar
1 cup nonfat plain yogurt
2 teaspoons freshly grated orange zest
1/3 cup orange juice
2 tablespoons canola oil
1 teaspoon vanilla extract
1 1/2 cup blueberries (fresh or frozen)

Combine all-purpose flour through cinnamon in a large bowl. In a medium bowl, whisk egg, egg white, and brown sugar until smooth, then whisk in the rest of the wet ingredients (minus the blueberries). Combine wet and dry ingredients just until moist. Fold in blueberries (hint: if you toss the blueberries in flour before adding them they won't turn your batter purple). Spoon into greased muffin cups and bake at 400 for 20-25 minutes.

Oh my goodness - I have all the ingredients, except the fruit. . .I will make these soon! They might be a fun snack for the El Salvador team as we travel!

i made these this morning! they are so yummy! i substituted dried cran strawberries (wow... what is fruit becoming these days?!) for blueberries though.
