Peanut Butter Krispies

1 cup sugar
1 cup light Karo syrup
1 cup peanut butter
6 cups Rice Krispies
1 12oz. package chocolate chips
*Mix sugar and Karo syrup in a saucepan and cook over low/med heat until boiling. Remove from heat. Stir in peanut butter. Stir in Rice Krispies. Press into buttered 9x13 pan; let harden. Melt chocolate chips in double boiler over hot water. Spread over Krispies mixture. Cool. Cut into bars.

Oatmeal Carmelitas

Base:
1 c. flour
2 c. quick-cooking oats
1 ½ c. packed brown sugar
1 ¼ c. butter, softened
1 tsp. baking soda
½ tsp. salt
Filling:
1 jar (12.25 oz.) Caramel ice cream topping (1 cup)
3 tbs. flour
1 c. semisweet chocolate chips
½ c. chopped nuts
1. Heat oven to 350F. Grease 13x9” pan. In large bowl , beat base ingredients with electric mixer on low speed until crumbly. Reserve half of crumb mixture (about 3 cups) for topping. Press remaining crumb mixture in bottom of pan.
2. Bake 10 min. Meanwhile, in small bowl, stir together caramel topping and 3 tbs. flour.
3. Sprinkle chocolate chips and nuts over partially baked base. Drizzle evenly with caramel mixture; sprinkle with reserved crumb mixture.4. Bake 18-22 min. longer or until golden brown. Cool completely in pan on cooling rack, about 1 hour. Refrigerate 1 to 2 hours or until filling is set. For bars, cut into 6 rows by 6 columns. Store in tightly covered container.

No-Bakes
½ cup margarine
2 cups sugar
3 cups dry oatmeal
5 tbsp. crunchy peanut butter
1 cup chocolate chips
1 tsp. vanilla
Heat sugar, margarine, and milk just to boiling. Boil for 1 minute; watch not to scorch. Remove from heat. Add chocolate chips, peanut butter, and vanilla. Stir until melted. Add oatmeal and stir until coated. Drop by teaspoons on to wax paper. Yum!
Pumpkin Chocolate Chip Bread
2 cups sugar
2 cups canned pumpkin
½ cup canola oil
½ cup vanilla pudding (a little pudding cup)
4 large egg whites
Mix together:
3 cups flour
2 tsp. cinnamon
1 ¼ tsp salt
1 tsp baking soda
1 cup chocolate chips
Combine wet and dry and mix well.Pour into a 8x4 greased loaf pan and bake in a pre-heated oven at 350 for 1 hour and 15 minutes.
