South Africa Sustenance

I was in South Africa this summer at a boarding school for high-schoolers. This is something that we cooked once a week. We made huge pots of it, so I tried to scale it down. It's really cheap and tasty (although more a winter recipe since it's winter down there right now!) It doesn't really have a recipe and we have different ingredients in the states. I'll write down what I used, but just throw things in.

Cut up:
2 onions
2 potatoes
4 carrots
2 chicken breasts
1 tomato
1 zucchini

Start cooking early so this has all day to simmer!
Cook the onions in oil in a big pot for a while. Add a bunch of water, some chicken broth or stock, and the cut up potatoes, carrots, and meat. Add a bunch of spices (I used italian seasoning, garlic salt, poultry seasoning, and most importantly -- curry). Turn the heat to low. After a few hours, add the tomato and zucchini. Simmer for a couple more hours and serve over white rice.
